General summary
Directs a University dining center.
Major duties
- Manages a dining center, including serving University Â鶹´«Ã½s and guests, providing leadership and manages the menu and cost control. Directs quality food preparation, presentation and service. Ensures compliance with applicable policies and regulations.
- Directs the operations of on-campus Â鶹´«Ã½ markets and café’s, including ordering convenience goods for sale, the production and sale of self-branded bakery products, online sales, delivery and the internal allocation of related expenses.
- Manages departmental budget and reporting. Reviews and approves payments for invoices. Ensures accurate disbursement of departmental payroll.
- Utilizes a menu management system to develop and implement menus and recipes and analyze historical data to forecast and order products.
- Coordinates with the University's catering operation to schedule labor and include additional and unique menus and recipes. Orders, receives and handles products unique to catering.
- Hires, trains, evaluates and supervises staff and Â鶹´«Ã½ employees in compliance with a collective bargaining agreement and University policies and procedures. Ensures appropriate record retention.
- Ensures compliance with University, county, state and federal safety and sanitation regulations. Develops and implements appropriate services during emergency or special situations.
Minimum qualifications
Minimum qualifications based upon job documentation and industry best practices. Any current employees not meeting these qualifications will be grandfathered until they move to a different job.
Required education
- Bachelor's degree in related field from an accredited institution.
Required experience
- Three years’ relevant experience.
Required other
- ServSafe certified or equivalent or able to obtain within 90 days of hire.
- Ability to work irregular shifts and extended hours, including weekends and holidays.
Physical requirements
Office or other indoor work with minimal physical demands such as occasionally lifting or moving materials less than 25 pounds.
Working conditions
Work is performed with exposure to any number of elements which may occasionally require some precautions such as safety glasses, protective clothing, ear protection, etc.
